Banana Coconut Muffins

There is something distinctly tropical about coconuts. I was watching IronChef America on Foxtel’s Food Channel on the weekend, and the theme was coconuts, oh glorious coconuts. From coconut milk for curries, coconut oil for aromatics, dessicated coconut for desserts, coconut juice for drinks, and that wonderful thing known as pina coladas – coconut has it all. So to celebrate everything coconut, I thought I’d add a little bit of kick to my usual banana muffins by incorporating dessicated coconut shards and voila! Instant coconut hit!

No frosting, no topping, nothing – just the sheer tropical flavours of banana and coconut with a slight fudgy brown sugar kick.

Banana Coconut Muffins

Recipe adapted from Exclusively Food’s Banana Cake

Makes approximately 12 – 14 muffins

125g unsalted butter, softened

1 1/2 cups soft, brown sugar

2 very ripe bananas (medium size), mashed

1/2 tsp vanilla extract

2 eggs

1/3 cup buttermilk

1 1/2 cups self raising flour

1/2 tsp bicarbonate soda

Pinch of salt

1/2 cup dessicated coconuts

  1. Preheat oven to 160 deg C. Line your muffin tin with paper cases.
  2. Mix together mashed bananas, butter, eggs, sugar, and vanilla extract.
  3. Slowly add buttermilk.
  4. In another bowl, sift flour, bicardbonate soda, and salt. Add this to the wet ingredients and mix to combine.
  5. Fold in dessicated coconut.
  6. Divide batter evenly on to the prepared muffin tin. Bake for 20 minutes.
  7. Cool on rack. Enjoy!

Chocolate Chip Muffins

Look Ma, I made muffins! And they’re so so so so so good! *gloat*

I came home early from work because I was am sick. I literally finished a box of tissues at work, sniffed my way through the morning, until I decided it’s best to go home rather than infect my poor workmates with my germs.

And home I went.

And had this.

Peppermint tea and chocolate chip muffins while watching my Nigella Feasts dvd in my jammies.

And then it started raining outside, and I started feeling cozy and homey, and then I felt better. Still sick, but better.

Hope to be back in action tomorrow though! There’s a pile of stuff at work and they won’t wait for anyone!

Chocolate Chip Muffins

From The Encyclopedia of Cookies, Biscuits & Bars by Hilaire Walden

Makes 12 standard sized muffins

100g butter, softened

1/3 cup caster sugar

2 tbsp soft brown sugar

2 eggs

1 1/2 cups all purpose flour

1 tsp baking powder

1/2 cup milk

1 cup bittersweet chocolate chips

  1. Preheat oven to 175 deg C. Line your muffin tray with paper cases.
  2. Beat the butter in the mixer until softened. Add both sugars and beat until light and fluffy.
  3. Beat eggs one at a time.
  4. In another bowl, sift flour and baking powder. Add to egg mixture, alternately with the milk.
  5. Fold in chocolate chips on to batter, setting aside a few to sprinkle on top before baking.
  6. Divide batter evenly on to prepared muffin tray. Sprinkle remaining chocolate chips on top.
  7. Bake for 20 minutes. Cool on wire rack. Enjoy!
