

Australian summers are hot hot hot. Dragon’s breath, or wind gusts of 40+ degree C literally like dragon’s breath on your face.
It’s January, smack bang in the middle of summer. Weather reports say that we are heading towards a historic heat wave in the next few days, and boy are we in for a treat.
Cool down with an easy, peasy lemon, lime & bitter drink while sitting outside in your balcony/patio/deck on your favourite dark timber outdoor dining set. Watch the sunset while having candid conversations with your beloved and enjoy the beauty of the seasons.

The Cheat’s Easy Peasy Lemon, Lime & Bitters
Makes approximately 1L jug
1/4 cup lemon, lime & bitter cordial syrup (I use Bickford’s)
600ml soda water
100ml cold water
Juice of 1/2 lemon
Juice of 1/2 lime
Thin, round slices of lemons and limes
1/2 bunch mint (leaves & stalks)
Ice
1. Place mint leaves, lemon and lime juice in a jug. Using a wooden spoon or a rolling pin, mash everything together.
2. Add cordial, soda water and cold water. Add the lemon and lime slices and ice. Mix well and serve chilled. Enjoy!

There’s nothing wrong with a cheats version. I always order LLB when I’m out and I wouldn’t mind making myself a huge jug that I can sip on whilst baking at home in this heat wave….. lol
